So, seeing as Christmas is fast approaching, i always find my parents are waaay too busy rushing around; buying last minute presents, sorting out christmas dinner and tidying the house. So, they always get me to do things towards dinner or cleaning...IM A TEENAGER, i don't want to do it, but i do; because i care!
Last year, i thought it would be nice to make some sort of pudding they would like, but also be simple to make! I found this PERFECT receipe that i tryed; from the BBC website, i love it so much that i thought i would share it with you beautiful people! So here it is;
- Your favourite brownies (I’d recommend about 15-20, cut into whatever shape you fancy. Although, i find circles are best.)
- Some small strawberries, cleaned and tops cut off (use the same amount of strawberries as brownies)
- Finally, vanilla-mascarpone buttercream (the recipe is below)
Mascarpone Buttercream Ingredients:
1/2 cup of unsalted butter,
8 ounces of mascarpone
cheese, room temperature
2 and 1/2 to 3 cups of
- 2 teaspoons of vanilla extract
- A pinch of salt
Using a stand mixer with a paddle attachment, beat butter and mascarpone cheese until light and creamy (about 2 minutes). Add vanilla extract and salt. Then, add 2-1/2 cups of sugar, half a cup at a time and continue beating until smooth. Add more sugar, (only if needed to reach desired consistency and sweetness).
To assemble your masterpiece, pipe a ring of vanilla buttercream on top of each brownie. Cut off the base of a strawberry so it is flat and place it upside down on each brownie. Top the tip of the strawberry with a dot of buttercream to finish the Santa hat. How simple was that?! NOW YOU HAVE YOUR DELICIOUS SANTA BROWNIES!
